Gluten Free Dairy Free Pancake Recipe
Sometimes there’s nothing like pancakes on the weekends. The thought of coming down the stairs in my pajamas, enjoying a nice hot cup of coffee, and cozying up to a warm plate of homemade pancakes is just dreamy. I made these gluten free and dairy free pancakes the other morning and they hit the spot.
It doesn’t take much to whip up a batch of these. I like to make pancakes from scratch and avoid some pre-made mixes because some of them contain added sugar and other additives that we just don’t need.
Gluten Free Dairy Free Pancake Recipe Ingredients
1 cup gluten free oat flour (like Bob’s Redmill)
2 ripe bananas
3 eggs
1/2 tsp vanilla extract
1 tsp cinnamon
2 tbsp unsweetened almond milk
Gluten Free Dairy Free Pancakes Directions
Combine all ingredients in a bowl and mix well together
Turn on stovetop to low/medium and heat with oil, butter or ghee if desired
Pour about 1/4 cup batter on to the griddle or pan and cook on one side until batter starts to bubble
Flip and continue to cook on the other side until pancakes are cooked through
Serve with berries, syrup or other toppings of your choice
Makes about 6 pancakes
