Coconut Berry Chia Bowl
I usually indulge in a smoothie for breakfast but sometimes it’s nice to change it up with a chia bowl. Chia seeds are a powerful source of omega-3 fatty acids, antioxidants, fiber, calcium and iron. It took me a while to perfect how to make a chia bowl — I didn’t like the texture of soaking chia seeds overnight, so instead, I just soak them for abut 15-30 minutes so they don’t get too mushy.
Chia bowls are a great alternative to smoothies and if you’re looking to add more plant-based breakfasts into your diet, this is a great option as well.
Ingredients
1 cup coconut milk
1 cup spinach
1 tbsp protein powder (like Truvani Vanilla Protein Powder)
1 banana
2 tbsp chia seeds
1 tbsp shredded unsweetened coconut
1/4 cup blackberries and raspberries
HERE’S HOW TO MAKE A Berry Coconut CHIA BOWL
Blend milk, spinach, banana, and protein powder in a blender
Place chia seeds in a bowl and pour blended mixture over the chia seeds
Let mixture soak for 15-30 minutes (or overnight if you want to make it the night before)
Stir mixture and place berries and coconut 1 tbsp shredded coconut and 1/4 cup blueberries on top
