Thai-Inspired Brown Rice & Vegetables
Simple meals with a ton of flavor are my thing. I whipped this thai-inspired brown rice and vegetable lunch up the other day and it was great. It’s easy to make and you can cook up a ton, making it perfect for meal prepping for the week. It can also be easily modified for those who are vegan and/or grain free.
Here’s what to do:
Cook up some ground turkey or beef and frozen shrimp on the stove with a little bit of sesame oil, garlic powder, and salt and pepper
Add about 2 cups of broccoli slaw (or any other kind of slaw in a bag — it’s easy to grab this pre-packaged from the store) about 4 tbsp of soy sauce or coconut aminos, about 2 tbsp fresh ginger, and 1 garlic clove minced and let cook for a few minutes on medium/high.
Squeeze the juice of a lime over the top and add in about 1.5 cups of brown rice
Let cook for a few more minutes on medium/high
Stir in a half a cup of crushed peanuts and enjoy!
This dish is easily modified to make it your own! Here are some other ideas:
Use cabbage slaw instead of broccoli slaw,
Toss in any additional vegetables like mushrooms or peppers
Add some eggs for extra protein
Omit the meat all together to make it vegan
Swap brown rice for quinoa
Omit the rice to make it grain free, paleo or keto.
